Before this I’ve made marble chocolate cheese brownies for quite a number of times, using the same old recipe that is safely kept in my drawer. I cant really remember the source for it was taken from the internet long time ago. But I notice there are few bloggers out there that have been using the same recipe, which I believe came from the same source.
Last Saturday I decided to give a try to a new recipe which the ingredients and methods are somehow totally different to the ones practiced before. So let’s take a peek at the recipe first shall we….
CREAM CHEESE BROWNIES – source: joyofbaking
1/2 cup (113 grams) unsalted butter, cut into pieces
4 ounces (115 grams) unsweetened chocolate, coarsely chopped
1 1/4 cups (250 grams) granulated white sugar
1 teaspoon pure vanilla extract
2 large eggs
1/2 cup (65 grams) all purpose flour
1/4 teaspoon salt
Cream Cheese Layer:
8 ounces (227 grams) cream cheese, at room temperature
1/3 cup (65 grams) granulated white sugar
1 teaspoon pure vanilla extract
1 large egg
In a stainless steel (heatproof) bowl placed over a saucepan of simmering water, melt the butter and chocolate. Remove from heat and stir in the sugar and vanilla extract. Add the eggs, one at a time, beating well (with a wooden spoon) after each addition. Stir in the flour and salt and beat, with a wooden spoon, until the batter is smooth and glossy and comes away from the sides of the pan (about one minute). Remove 1/2 cup of the brownie batter and set it aside. Place the remainder of the brownie batter evenly onto the bottom of the prepared pan.
Then, in the bowl of your food processor (or with a hand mixer), process the cream cheese until smooth. Add the sugar, vanilla, and egg and process just until creamy and smooth. Spread the cream cheese filling evenly over the brownie layer. Spoon small dollops of the reserved brownie batter evenly on top of the cream cheese filling. Then with a table knife or wooden skewer, swirl the two batters without mixing them.
My comment:
Somehow I don’t really like its brownies texture…too dense, solid, compact..in other words you wouldn’t want to go for a second slice after having the first bite. Unless if you’re the type who likes something very very fudgy and dense, then this recipe surely is the perfect one for you! Anyway I still prefer my previous version of marble cheese..cakey and light, both the brownies and cheese layer are not very strong and intense, the combination works very well n just nice to my tastebud :)
But looking at the recipe again, I think probably we can alter the method a bit and still have the same old brownies texture that I like. Bake the brownie layer first, and later pour the cheese layer on top of the baked brownie. Total baking time definitely goes longer, but the brownie layer wud have enough time to rise (and shine!!) and develop some pores, hence resulting it to be cakey and less fudgy.
