(12) Devil's Food Chocolate Cake

This was made for a neighbour, special for her hb's birthday. She initially wanted marble choc cheese brownie, but i suggested for this instead as the later one is rather too plain and simple. Alhamdulillah the comment was positive, glad she loves it! Tq my dear jiran!!!

I planned to do something different, but it turned out tad bit unappealing huhu. Maybe I should just maintain the usual deco next time :p

My all-time favourite, as well as hb's! Some devils cake doesn't call for cream cheese frosting, maybe it suits well for those who are not really into creamy and heavy cakes. But to us, chocolate and cheese truly makes a perfect combination...ibarat lagu dan irama!!

Anyway i can't really remember if i've posted the recipe before, but it doesn't cost me any penny to repost the recipe again right...so here we go!

DEVIL'S FOOD CHOCOLATE CAKE - source: Rima of bisousatoi.com

Ingredients

1 cup all purpose flour
1/4 cup cocoa powder
3/4 tsp bicarbonate soda
1/4 tsp salt
1/2 cup granulated sugar (i reduced to 1/4 cup)
1/2 cup brown sugar (i reduced to 1/4 cup)
65 gram butter
1 large egg - size A
1 tsp vanilla extract
1/4 cup buttermilk (i don't hv buttermilk in fridge, so i go for dutch lady full cream milk)
1/2 cup warm water


Methods
Preheat oven at 170C .. greased cake tin (i used 7", if u double the recipe, opt for 9" tin)
Sieve flour, cocoa powder, bicarbonate soda, salt, and set aside.
Beat butter with sugars until light and fluffy, add egg.
Add dry ingredients (flour, cocoa powder etc) alternately with liquid ingredients (buttermilk + warm water) in three portions
Add vanilla extract and continue to mix till well blended
Bake for about 30 minutes or until just cooked


Cream Cheese Frosting
250 g cream cheese (room temp)
125 g butter (room temp)
1 cup icing sugar - sifted
1 tsp vanilla extract
juice of a squeezed slice of lemon, to rid the cheese taste - i personally never add lemon juice to any of my cream cheese frosting

Beat cream cheese and butter, just until creamy, add the icing sugar, vanilla and lemon juice.


Chocolate Ganache
200 ml double cream with at least 30% fat content
250 g dark chocolate, chopped finely
a pinch of salt - i omit this, never add salt to my ganache all this while

In a double boiler, warm double cream until just at boiling point, add chopped chocolate and salt and stir, when all chocolate is melted, remove from the heat and continue stirring until all well mixed.

Cool cake completely, spread the cream cheese frosting and pour cool ganache on top.

p/s: The recipe is quite simple but requires few extra steps like cutting the cake into halves, sandwich with cream cheese, cool in fridge for a while, then cover with cream cheese on its top and last but not least pour some choc ganache as finishing. Oh wait, in my case i also hv some choc curls n choc chips as the final touch..(also fresh strawberry for special occasion haha)…very chocolaty, rich and undoubtedly sinful!

  2. Mmg kecik.guna 7' pan. Nk tinggi ko kena potong 2 n buh cream tebal2 :) tp berat arnd 1kg not bad.kalo double recipe berat dlm 1.75kg
