Thanks to K.Tie for sharing this lovely recipe. The biscuit turns out to be very crunchy, not
too sweet, it has lil bit of that sour taste thanks to the presence of dried
cranberry :)
Nevertheless, I’m the only one in the house that loves this biscuit, the rest doesn’t
appear to like it because of that cranberry. Hurmm anything that comes with berry
including kismis..mesti derang tak suke haishhh. Tahu tak kome harga cranberry
ni mahal? haha sabor jela. Anyway the recipe was posted via our geng lunch
group in WA..i made an effort to type it here in case I lose the image later.
Ingredients:
225g butter
140g castor sugar
1 egg yolk, lightly beaten
2tsp vanilla extract
280g plain flour
40g desiccated coconut
60g dried cranberries – I add lil bit more since I hv more!
salt
Steps:
Put the butter n sugar into a bowl. Mix well with a wooden spoon, then
beat in the egg yolk and vanilla extract. Sift together the flour and a pinch
of salt into the mixture, add the coconut and cranberries and stir until
thoroughly combined. Scoop up tablespoons of the dough and place in moulds
spaced well apart. (I scooped out smaller than a tablespoon, glad I did that
because the dough turns out sangat mengembang ok!)
Bake for 12-15min until golden brown.
Review: biskut ni sangat sempoi dan senang. Must try especially for
beginners or orang yg malas mcm saya.
Bahan2 tak byk…steps sempoi je…takyah nak tekan2 guna mould…easy peasy dan yg
penting sedap!
