Chicken crabstick roll goreng

Here goes another variation of roti gulung goreng. Instead of using sardin or sausage for the fillings, i stuffed the bread with a combination of chicken, crabsticks and sausage. For a more healthy option, you can chunk in diced carrots, capsicum and holland onions, hence adding some fibres to your meal (which also means taking extra time for my kids to dig each and every bit of the vege and shove them aside haha).

My kids loved this new variation of fillings which makes up for our dinner last night.

Homemade chicken pizza

Another quick homemade dinner that is surely a keeper. Simple, tasty, yet can be considered as a perfect balanced meal for ur little family :) I just use a ready-made pizza doh base that can be bought at any supermarkets i.e. AEON, Jusco, Tesco, etc. I recently bought mine at AEON, 2 pizza base at RM6-7++. Alternatively you can buy them at a much cheaper price (5pcs at RM7++ only!) at any bakery supply stores such as Yummie, Bake With Yen, etc.

For the fillings, i put chicken, button mushroom, crab sticks and sausage. Cook the filling first before u spread them on top of the dough. I spreaded some tomato puree & chilli sauce on the dough before topping up with the fillings. For vegetables, i used capsicum, onions and cherry tomato. Drizzle some mayonis if u like...
and last but not least loads of shredded cheddar cheese!!
i also garnish the top with some oregano or mixed herbs, just to give some aromatic scent when the pizza is baked in the oven.
Done! My eldest said...uhh ni pizza terbaik di alam semesta haha. Well obviously where can u get a pizza with a heaping n generous filling n loads of cheese kan??
Selamat jadi menu berbuka puasa kelmarin. Alhamdulillah settle dah hutang pose sehari..lega sgt!!

Resepi dorayaki or mini pancakes

Not really sure what's the exact difference btwn dorayaki (makanan Doraemon yg femes tuh) and pancake. Upon doing some research over the internet, i found various dorayaki's recipe which almost all will use the same basic ingredients i.e. flour, egg, baking powder.

Hence for today's tea-time i made my vry 1st dorayaki, but using a pancake's recipe which has always been a keeper for quite some time.

You can stuff ur dorayaki with any of ur favorite fillings such as red bean paste, chocolate jam or strawberry jam... me using kaya+peanut butter grape jam. Sgt sedap and fluffy, of course having a twin pair was just not enough!

The tips to making a soft n fluffy pancake..never never pat or press ur pancake batter!

Here go the ingredients..pls try it out!

1 cup flour
2tsp bkg powder
1/4tsp salt
2tbsp sugar
1 large egg - lightly beaten
1 cup milk
2tbsp butter - melted

Whisk together the flour, bkg powder, salt n sugar.

In another bowl, whisk the egg,milk n butter.

Combine both mixture, stir until just combined. The batter shud hv some small lumps. Do not overmix the batter ok!

spread some kaya and peanut butter, and that's it! Perfect for brekkie, afternoon snacks or even supper :)

Banana walnut cake

Got the recipe from k.Elin. Cake is very moist n soft in texture. Addition of walnut into the cake batter gives an extra boost to its overall taste :)

Sardin roll goreng

Pagi ni breakfast sardin roll goreng. Pertama kali buat dlm sejarah, haha jangan gelak ye. Memang sempoi je..cuma disebabkan tak pernah beli breadcrumb, so tak pernahla buat :p Alang-alang baru beli stok breadcrumb last wiken, so pagi ni boleh lah kite try. Esok boleh wat sosej roll goreng plaks utk kekanak. Resepi sempoi jer.

Masak inti sardin. Then roll kan roti anda nipis guna rolling pin/cawan/apa2 jelah. Then letakkan inti sardin di sebelah bahagian roti, gulung roti. Gam kan hujung roti dengan telur. Celup dalam telur (dibubuh secubit garam) dan golekkan di atas bread crumb. Then boleh terus goreng :)

Resepi Grilled Salmon with Lemon Butter Sauce

Punyelah mengidam salmon grill, sampai sanggup lari ke AEON Mid Valley time lunch minggu lepas utk cari ikan salmon. Farra kata kekadang AEON ada promo, so kite terjah jelah. Rezeki ari tu salmon cut tak berapa mahal sgt, dan paling best jumpa asparagus tgh promo..satu pek dlm RM5-7++ depends pada berat...mmg cun sgtlah salmon grill pekena dgn asparagus!

Sempoi je nak buat grilled salmon nih. Utk ikan, saya cuma perap dgn garam, lada hitam, butter dan olive oil. Tabur jugak dgn mixed herbs nak kasik wangi. Then grill jelah atas pemanggang ajaib both sides sampai ikan masak. Asparagus dan cherry tomato pon saya grill sekali bersama-sama dgn ikan...tabur jugak garam sket. Kalo rajin, boleh pair kan grilled salmon ni dgn steamed carrot, kacang buncis and brocolli ala2 Chillis..pergh konfem sedapp!

Bahan2 utk lemon butter sauce:

2tbsp butter, sedikit bawang besar didadu, 1tbsp tepung gandum, 1/2cup - 1 cup fresh milk, sedikit garam, sedikit lada hitam, sedikit mixed herbs/daun parsley/rosemary/etc.

Cara nak buat sauce tuh:

Panaskan butter, then masukkan bawang goreng sampai layu sket, masukkan tepung, susu, garam, pepper and mixed herbs...kalo pekat sgt tambahlah susu tuh ok..if taknak lemak sgt tambahlah air masak sket. Last skali squeeze kan sedikit lemon juice dlm kuah tadi...done!

Resepi homemade muesli bar yg sedap!


This recipe is a combination of several recipes that i googled from the internet. Honest confession, it's my very first time eating oats so to speak. I am not really a fan of oats, or muesli, or any other fibre-related food, but the fact that i've gained 3kg within just a month during my last pregnancy check up somehow sent a red alert to the body. The mind is telling that i must do a lil bit of modification to my breakfast meal, no more nasi lemak Pak Man everyday yer!

Before trying out with this recipe, i've recently bought 2 boxes of on-the-shelves ready made muesli bars, Nature Valley roasted almond and Yogood blueberry and cranberry flavours. My review: NV was lil bit too hard to munch, lack of sweetness and pretty bland. Yogood, on the other hand was way too sweet even for a sweet-tooth person like me, probably because of its yogurt coated cream. My staff had also introduced me with her favourite brand called Carman's. Taste-wise oklah but i don't really like it due to the strong hint of cinnamon unless u are a die-hard fan of cinnamon.

 So now lets get back to the recipe. I used 2 cups of rolled oats (brand Pristines, well i just picked up one of the cheapest brand on the shelves haha), 2 cups of honey cornflakes, 1/4 cup of brown sugar, 1/4 cup of honey and 150g butter (i didnt really weigh the butter, pakai agak2 jer hehe). Melt the butter, sugar and honey together in a medium-sized saucepan. Once melted, mixed together with the oats and cornflakes. Oh u can also use any other cereals to ur liking e.g. rice pops, cocoa pops, bran flakes, nestum, etc.

Then add in your favourite chopped nuts and fruits. In my case i used toasted almonds, walnuts, black raisins and cranberries...tu je pon yg ada dlm fridge sebenarnya :p Again i didnt measure them exactly, just agak2 jer ikut preference memasing la yer. Bila all ingredients dah mixed together, boleh la rasa tahap kemanisan dia. If u find it too sweet, boleh tambah oats and cereals lagik...if kurang manis, add in some honey/melted brown sugar.

Line up your baking pan with greasing paper, masukkan muesli mixture tadi and press them thoroughly and evenly throughout ur whole pan. Tekan2 byk kali kasik mampat yer. Then bake in the oven for 30 minutes or so until the muesli turns into golden brown. Cool them completely, then cut into rectangular shapes or squares & keep into an airtight container.

My review - rasa dia chewy gooey but not too chewy macam Carman's, taklah manis sgt macam Yogood, texture-wise tak keras mcm Nature Valley. In summary it matches our tastebuds perfectly! Surprisingly idlan pon suke and i notice hubby took them as snacks in between meals. Anyway korang adjust lah tahap kemanisan tu ikut citarasa masing2...selamat mencuba!!

Rolled oats+honey cornflakes+walnuts+almond+raisins+cranberries. Mixed all of them together.


Next, add in melted butter, brown sugar and honey. Stir thoroughly the mixture until well-blend.
tossed them into ur baking pan
and press thoroughly sampai mampat!
cut into squares/rectangles once cooled completely
say bye to ready made muesli bars! cewahhh

Resepi homemade chicken fingers

Senang je nak buat chicken fingers sendiri..yang penting anda dpt kontrol kandungan bhn2 yg digunakan..tak payah letak lemak or bhn2 lain yg tak sepatutnya diletak mcm instant frozen food yg lain. Tapi tak dinafikan kena extra rajin sket la kan...kalo x gagahkan diri ke dapur mmg tak jadi jugak hehe
So bhn2 yg saya letak adalah isi ayam, kentang, carrot, sedikit daun parsley, garam dan black pepper. Kentang & carrot rebus and lenyekkan dulu. Ayam kena blend hancur..then baru campurkan dgn bhn2 lain tuh.
Kemudian boleh bentukkan ikut citarasa memasing..bulat bole..leper bole..mcm fingers bole..ikutlah! masa nak bentukkan tuh mix sket dgn tepung jagung, then celup dlm telur, last skali baru coat dgn nestum atau bread crumb..ikutlah apa bhn yg ada kt dapur korng.
Kalo nk trus ngap, bole goreng or bakar dlm oven. Kalo nk frozen, susun chicken fingers dlm loyang n frozenkan dlm sejam dua...bila dh keras sket baru transfer dlm ziplock bag or apa2 bekas yg korng ada. Sonang je kan! :)

Recipe: Coconut and Cranberry Cookies


Thanks to K.Tie for sharing this lovely recipe.  The biscuit turns out to be very crunchy, not too sweet, it has lil bit of that sour taste thanks to the presence of dried cranberry :) Nevertheless, I’m the only one in the house that loves this biscuit, the rest doesn’t appear to like it because of that cranberry. Hurmm anything that comes with berry including kismis..mesti derang tak suke haishhh. Tahu tak kome harga cranberry ni mahal? haha sabor jela. Anyway the recipe was posted via our geng lunch group in WA..i made an effort to type it here in case I lose the image later.

Ingredients:
225g butter
140g castor sugar
1 egg yolk, lightly beaten
2tsp vanilla extract
280g plain flour
40g desiccated coconut
60g dried cranberries – I add lil bit more since I hv more!
salt

Steps:
Put the butter n sugar into a bowl. Mix well with a wooden spoon, then beat in the egg yolk and vanilla extract. Sift together the flour and a pinch of salt into the mixture, add the coconut and cranberries and stir until thoroughly combined. Scoop up tablespoons of the dough and place in moulds spaced well apart. (I scooped out smaller than a tablespoon, glad I did that because the dough turns out sangat mengembang ok!)
Bake for 12-15min until golden brown.


Review: biskut ni sangat sempoi dan senang. Must try especially for beginners or orang yg malas mcm saya. Bahan2 tak byk…steps sempoi je…takyah nak tekan2 guna mould…easy peasy dan yg penting sedap!

Chicken mushroom tortilla wraps

Loved this wrap very much! Lg sedap dr kfc kotttt haha. This makes a perfect quick n healthy bento for ur family :)

Prep senang je. Goreng ayam n mushroom dgn bawang holland n olive oil. Tortilla tu plak goreng atas kuali kejap tanpa minyak..in my case msk atas pemanggang ajaib tuh. Then bubuhla inti ayam,mushroom, capsicum n tomato. Garnish with chilli sauce, mayonis n cheezy sauce. Last but not least sprinkle some shredded cheddar n wrap ur tortilla nicely. Microwave for 2-5min until cheese melts. Nyummmsss!

Macaroni Alfredo

Not really sure what's the exact difference between alfredo & carbonara sauce. But my version of alfredo is a slightly less thickened sauce..which is not too muak i guess :)
Recipe is very simple. Suitable for mommies who wanted to settle for a quick home-cooked dinner after a long n tiring day at the office :)
Melt some butter, sautee the holland onion, add cubed chickens, sliced button mushroom, prawns or any proteins to ur liking. Then add enough fresh milk for the gravy, whipping cream, put some salt, paprika, black pepper n oregano or mixed herbs. Lastly put shredded cheddar cheese n cubed capsicum..& yesss u're DONE!
P/s: ni mmg my eldest's most top favourite food aside from mac n cheese. Sumer yg cheezy2 eh haha

My version senang je..ikut instinct hehe. Buh garam sket..black pepper..then fry kejap. Bila dh sejuk coatkan dgn tepung jagung...then freeze! Sempoi je kan hoho pasni leh bli russet potatoes bebyk :) Sepeket Simplot rm9...sekilo kentang lg murah rasanya :p

Weekend chilled out!

Started this morning as early as 530am. Hit the kitchen to prepare roti jala n kari daging and managed to get everything done at 7am. Woke up the kids, and ask them to hv light breakfast b4 we headed off to Lake Valley for jogging!

The place is very nice n serene. There is a lake situated right in the center of loads of beautiful semi d and 3-storrey terrace houses surrounding it. The LV also has 2 small children playgrounds, which mommies n daddies can take a short break while letting the kids to play.

I had 2 rounds this time. 1st round of jogging n 2nd.round of semi-fast brisk walking hehe. While i did my 2nd round hubby let the kids to feed the fish.

We spent only 1 hr at the lake, and got back home to have our 2nd round of roti jala haha!
What a bliss :)

And now at 645pm i just had the oven to work for my dark choc brownies treat! Never thought that yesterday's batch of portuguese egg tarts can.only last within a day...sedappp sgt wehhh kejap je licin :)
Ok then hv a great Monday tomorrow peeps. Mmg la lemau yg amats but then lets send the positive vibe all over the body yeahhh!

Ooppss a quick.check at my calories intake. Countless pcs of egg tarts, 4pcs roti jala, nasi for lunch n now dark.choc brownies...hmm mmg tak bole lawan.calories burnt pg tadi..cuma 150 jer :p hihi

Senang je resepi roti jala nih. 3 cwn tepung gandung, 3 cawan air, sebiji telur, sedikit garam dan kunyit. Blend je semua dlm blender..and that's it! Silalah menjala hihi

Portuguese egg tart using instant pastry puff!

I asked hubby to get for me whipping cream this morning since i've planned to make this scrumptious portuguese egg tarts since last week. In fact i've bookmarked the recipe in my hp in case i forget the source.
So here we go my version. It doesnt look as pretty n appealing as the original source..but i hope it tastes super good! Belum rasa lagi....lepas bakar terus tdo sbb migrain dr ptg tadik :( i'll update n post the review later ye till then hv a blast weekend! Ohh yes recipe taken from the kitchentigress blog...i posted here for ease of reference.

Recipe says it yields 9 tarts...but mine yields 15 tarts..i guess my muffin hole is not too deep...hence i got more :) 

UPDATE - here goes my review - mmg sangat sedapppp heheh hubby and kids mmg suka. Hubby siap tanye semlm..susah ke nk buat tart tuh? if u read between the lines tu maksudnya dia hint nak suruh buat another round la tu :) Anyway next time i think i'll reduce a bit of sugar...utk menjaga kesihatan kena kurangkan manis :p

Mexican coffee bun aka Roti Boy!

Dah lama rasanya tak mkn roti boy...dulu2 everytime pegi Alamanda mesti singgah beli. Now dah lama tak visit Alamanda...so dah lama jugakla tak mkn roti boy nih hihi. Bau roti boy ni sgtla harum semerbak...kiranya before sampai outlet roti boy dari jauh dah boleh tangkap bau kopi tuh....sgtla lazattts aroma kopi dia tuh!

Last few weeks baru beli bread flour, bread improver and bread softener...fuhh pestaim beli nih, almaklumlah tgh mood rajin nk blajar meroti. Kiranya kalo part meroti ni i'm really a beginner...time buat tu ntah brape kali baca resepi nak kasik paham hehe mcm slow sket otak nak absorb :p

Proses nak buat roti boy ni agak leceh...ada 3 parts atau steps yg perlu dilalui. Proses buat dough, buat filling and last skali buat toppings. Nama beginner tapi gatal pegi cari resepi yg susah sape suruh kan?? hehe rasakan kau! Selepas menggugel ke few web sites, akhirnya aku decide utk try resepi nih. Tengok review ramai forumer ckp sedap...so roti boy here we come!! pls be nice to me the first timer yeahhhh

Bahan-bahan ( 17 biji bun )

 Filling

  • -200 gm mentega
  • -1/2 teaspoon vanilla essence
  • -70 gm brown sugar 
  •  
  • Topping
  • -200 gm mentega
  • -160 gm gula icing
  • -3 biji telur grade A- pukul sedikit
  • -1 suduk kecil perisa kopi- boleh diganti dgn melarutkan 2 sudu besar instant coffee dengan 1 sudu besar air panas.
  • -200 gm tepung gandum
  • Doh Roti
  • -500 gm tepung berprotin tinggi- di ayak
  • -2 sudu kecil bread improver+ 2 sudu kecil bread softener ( optional)
  • -20 gm susu tepung
  • -75 gm gula castor
  • -3 sudu kecil dry yeast
  • -1 sudu kecil garam
  • -1 biji telur- dipukul
  • -250 ml air/ susu segar ( Jgn gunakan susu tepung sekiranya menggunakan susu segar).
  • -60 gm mentega

Cara-cara

  1. Filling- Pukul mentega dgn mixer pada kelajuan sederhana selama 3 minit. Masukkan essence & gula perang. Simpan di dalam petisejuk sehingga sedia untuk digunakan.
  2. Topping- Putar mentega dgn mixer pada kelajauan sederhana selama 5 minit. Perlahan2 masukkan telur,gula icing, & coffee flavoring. Ayakkan tepung kedalam adunan and putar lagi pada kelajuan perlahan sehingga semua sebati. Simpan didalam petisejuk sehingga sedia utk digunakan.
  3. Doh Roti
  4. -Gaul rata tepung, gula dan garam didalam mangkuk.
  5. -Masukkan yeast, bread improver & bread softener ( jika menggunakannya) dan gaul rata lagi.
  6. -Masukkan telur dan air/susu segar.
  7. -Uli adunan sehingga menjadi adunan dan masukkan mentega. Uli lagi sehingga lembut & elastik selama 10-15 minit.
  8. -Bahagikan dough kpd 17 biji bola kecil dan tutup dgn film cling selama 10 min.
  9. -Leperkan dough di atas tapak tgn & letakkan inti/filling. Tutup rapat supaya inti tidak meleleh keluar sewaktu dibakar.
  10. -Susun diatas loyang pembakar yg sudah dilenser dgn mentega/minyak/tepung dan jarakkan dlm 7.5 cm.
  11. -Rehatkan selama 45 min ditempat panas (warm).
  12. Mexican_bun2
    -Pipe kan topping diatas bun secara spiral bermula dari top center.
  13. -Bakar didlm oven yg telah dipanaskan pada suhu 170C selama 15 min atau sehingga bun keperangan. 
Fuuhh panjang kan steps dia? haha kalo tak tabah tak payahla try resepi nih..mmg penat. Anyway my review, aroma kopi tu tak harum semerbak mcm kat kedai..maybe kena tambah byk sket kopi essence tu baru power...atau guna kopi cap mahal haha. Roti plak tak se fluffy version roti boy...maybe tak cukup proofing...atau kedai2 roti tuh maybe ade secret ingredient yg bole buat bun jadi lembut giler gitu.  Filling dia - i prefer kalo manis sket lagi....baru rasa kontra dgn dough roti yg plain tuh. Sebab topping tu pon takdela rasa kopi atau manis sgt....but anyway, hubby kata sedap walaupun tak selembut bun kedai :) Toppings masih byk berbaki...i simpan dlm fridge jer. Maka next time terpaksala buat bun lain plak to make use of the leftover toppings hihi.

Next challenge - i wanna try doing cinnamon rolls....feveret jugak nih! :))

Homemade beef patty

I'm now trying to minimize buying sausage n other frozen food as those probably contains high unwanted fats n excessive preservatives. So here we go a simple yet tasty homemade beef patty, to replace the frozen beef burger that u can find on the shelf. A 1/2kg beef can yields approx 10pcs patties...just good enough for a 1-2 week ration :)

How to:
Put the beef, onion, garlic, daun sup, salt, coarse black pepper n 1 egg into a food processor. Run your fp for few minutes... Bila daging dh hancur, flatten the beef into round shape according to your desired size. Some people put bread crumbs to get the beef sticks together..ai letak tepung sket time shape kan beef tuh. So that's it senang je kan! Hehe

This topping version seriously is delish. Sauteed chicken cubes with mushroom, added some salt, black pepper, fresh milk n cheddar. Lastly add the sliced crab stick into the mixture. Done!

Roti Arab & Kari Sardin


 This is my 2nd attempt of making roti arab, of which the recipe was googled from the internet. The first and the best roti arab I’ve eaten will always be my mil’s version, nevertheless I’ve forgotten on the correct measurement, hence let’s just make do with the online recipe then!

Recipe taken from here. Alhamdulillah it turned out pretty well, agak rangup di luar and lembut di dalam. The only critic (or read it as a positive comment hihi) from hubby is that roti arab ni macam lekat minyak, not sure the reason though. Other than that they are good and serves well for breakfast/lunch/dinner together with kari sardine or any kari of your preference :)  In my case, we ate it together with kari sardine, my first attempt actually…tak sangka sedap rupanya hoho senang plak tuh!! So let's take a peek at the recipe, i just copy & paste from kak Dayangjack yer.

Roti Arab 
Bahan-bahan : hidangan utk 4-5 orang
  • 250 g tepung gandum
  • 2 sk yis mauripan
  • 1 sb susu tepung (jika guna susu segar tak perlu guna susu tepung)
  • 1 sb marjerin/mentega  - i use buttercup
  • 1 sb gula 
  • 160ml -170 ml air suam (boleh campurkan dgn susu segar) - in my case i just use air suam, however my mil's version mmg campur air suam and susu
  • 1/2 sk garam halus
Cara-cara :
  1. Satukan yis bersama air suam dan gula. Bancuhkan hingga gula larut. Kemudian biarkan sebentar sehingga yis berbuih. - i rested the yeast for quite a couple of minutes, sempatlah mandi and solat dhuha kejap. Masuk2 dapur terkezut tgk yis tu dah berbuih2 haha
  2. Di dalam bekas yg agak besar, ayakkan tepung. Satukan dgn garam, susu tepung dan marjerin/mentega. Gaul2kan rata2. Buatkan lubang di tengah2nya, kemudian tuangkan yis tadi. Kacau dan uli hingga menjadi doh yg licin. 
  3. Setelah itu, simpankan doh di dlm bekas yg agak besar dan tutup kemas dgn kain lembab. Biarkan ia naik selama 1 jam. - here comes the multitasking part. i sempat iron baju sekolah and buat keje lain sambil tunggu dough naik :)
  4. Sementara itu, bolehlah buat kari sardin, kari ikan, kari ayam dsbnya....hehe.
  5. Keluarkan doh, uli sekali lagi dan bahagikan kpd beberapa bahagian (DJ suka buat yg kecik2 jer lagi kiut..hehe). Bulat2kan doh dan leperkan/canaikan. Jangan terlalu nipis atau terlalu tebal. - i tak buat kecik2 macam kak dayang. buat medium-sized..dptla dlm 11 ketul roti arab.
  6. Panaskan minyak secukupnya utk menggoreng. Setelah minyak cukup panas, goreng doh tadi satu persatu. Siram2kan roti agar ia naik kembang. Goreng hingga keemasan. Angkat dan toskan. - sambil goreng sambil buat kari sardin :)
  7. Bolehlah dihidangkan bersama kari sardin atau lauk apa2 jelah...selamat mencuba!

 proses mencanai bermula. tgk tu siap guna roller fondant tauuuu...maklumlah baker dah pencen from baking, mujur roller ni ada kegunaan dia hihi


lepas canai rest kan dough kejap before goreng. so boleh la start buat kari time nih

 Roti arab ku siap!! ada yg elok naik menggelembung, ada yg tak naik sgt...tapi dlm tetap rasa sama. Time goreng tuh curah minyak panas atas roti tuh...kasik dia gelembung.

 dimakan bersama dgn kari sardin yg sempoi tapi sedap! Cara dia - tumis bawang bersama cili giling and sedikit rempah kari ikan, then baru masuk sardin. mmg umpphhh kids pon suke!

p/s: Disebabkan dah terer buat pasni boleh jadi menu rutin time weekend :p
