(14) Oreo brownies - smacking sweet erkkkk!!!

OREO’S BROWNIES – source kitchen guardian and rima
Ingredients
225g butter
240g cooking chocolate
3 grade A eggs
1 tsp coffee powder (i used nescafe 3in1 rich)
1 tsp vanilla
250g caster sugar
60g flour
40g cocoa powder
1 1/2 tsp baking powder
1 tsp salt (i omit this)
1 1/2 packets Oreos biscuits ( I used 1 packet which I crushed with their cream)
Method
1.Melt butter and chocolate. Let them cool a bit.
2.Add sugar, vanilla, and coffee powder. Add eggs one by one, stir until well mixed.
3.Add sifted flour, baking powder and salt.
4.Stir in crushed Oreos biscuits! - i literally just crushed them with my fingers
5.Grease and line a 10 inch square cake tin (i used 9' pan) with baking paper... and bake in a preheated oven at 180C for about 25 mins. (i bake mine for 45 min, my oven really needs some servicing!! HAHA)
p/s:
I bake until they are just gooey and leave a slight mark on a toothpick that was inserted into the brownie. Hence, I got a chewy gooey brownie in texture…not a dry one. My hb likes it (and he also agreed to reduce the sugar next time) and enjoys munching them just like you munch the chewy gooey choc chips biscuits! Reduce the sugar, and enjoy them with a cuppa coffee. Just perfect!!

I expressed my worry and concern to the attending doctor today since Ammar refused to take any solid since Saturday evening, and he said this to me....no worry mama...your son is having all the nutrients he need by consuming your milk.
Now i have Bepanthen the magical cream to soothe my pain, i also have the precious gift running inside to protect my baby's health all the time, and it's free. Syukur.

Bepanthen ointment - a must-have for nursing moms!!
Of late I keep on experiencing sore nipples, both sides, which every time when it comes to nursing I was like ‘ouchhh’ or ‘arghhhh’ or ‘adoiii sakitnyeeeerrrrr’…errr things like that. Those who never had this before, you may think I sound somewhat exaggerating. But wait till you have it (janganla doa kena) then you’ll understand why a nursing mom must have something to become their constant companion to cure the sore.
One of my friends who also bf her son introduced this cream to me. First time when I used it, it took me around 5-6 days to cure completely, that after several days of surviving medication-less. You may apply once, twice, or as frequent as you want, at your own convenient. I love it because you can still continue breastfeeding your child without having to clean the area prior nursing. Pretty effortless isn’t it?
Before I forgot, this magical ointment actually carries its main tagline as below:

(13) Carrot Cake - now u won't feel guilty eating 2 slices at one go!!
Me never been a fan of carrot cake, well at least not until I had the first slice recently given by my baker friend Farra. Her version of carrot cake tastes really good, when I say good I seriously meant it. Before this I had eaten the one from SR, also few other different version given by friends and colleagues, but none really taste pleasing to my taste bud. Hence explained why I never have the interest to bake one for my family (read: myself). But Farra’s version (I’d say sifu of carrot cakes since she has made loads of carrot cakes before, mmg hantu carrot lah!!) has finally change my perception towards this kind of cake, it made me can’t wait to go to Yummie to do my very first walnut shopping!
Now before you decide to bake this cake, let me warn you.
This wonderful cake takes a little bit of extra preparation. Few works of chopping and grating, which to some it may sound rather easy but it took me like forever ok! After done with half stick of the first carrot I was like ‘goshhh why am I doing this’ and ‘iskkk I wish I can just bunk this carrot inside the blender and let the machine do its works!’…err things like that…sambil grate sambil membebel non-stop :p While doing the grating thingy I keep on thinking ‘there must be some specific techniques required to grate your carrots very quickly’ but I just couldn’t figure.
Chop the walnuts (manually of course), also the raisin! I’d say I’m quite well at doing these, probably because I’ve done lots of practicing before. Not the walnuts n raisins ya, I mean something else :p

Now we have everything under one roof, notice how colorful the batter was? When stirring the batter I kept on thanking myself for making the decision to bake this cake…simply bec it looks so healthy!!! (with loads of carrots mind you ehem ehemm!).
Ok my cake is done. Baking time around 40-45min, depends on your oven temperature. Pretty dull and plain isn’t it? but don’t judge a cake by its outer look, belum cuba belum tahu ngeh ngeh :p
So here goes the final result, after smoothing the cake with the scrumptious cream cheese. Now it doesn’t look that plain isn’t it?

Ingredients:
210gm castor sugar ( i used 110gm castor + 100gm brown sugar)
225gm corn oil or (i used 1 cup of canola oil)
4 eggs
200gm carrot, grated – 2 cups
110gm pineapple, chopped and drained (i dont hv any, so i omitted this. farra says adding in pineapple will make the cake to be extra moist)
50gm walnuts, chopped roughly ( i used ¾ cup)
50 gm raisin, chopped roughly ( i used ½ cup)
250gm cups superfine flour or 2 cups wholemeal flour (i only hv soft flour at home, so didnt use wholemeal flour)
1.5 teaspoons baking powder
1 teaspoon baking soda
1 tsp cinnamon powder
(all sift together)
1 teaspoon vanilla essence
1. Beat in a separate bowl the eggs, oil, sugar and vanilla.
2. Chuck in all dry ingredients and carrot. Stir well until all combined.
3. Pour into round/square 9" pan, lined and greased, and bake in 180C oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
4. Cool. Frost with cream cheese frosting.
Cream cheese frosting
100gm cream cheese
100gm unsalted butter ( guna butter biasa pon takpe)
100gm icing sugar, sifted
1 teaspoon vanilla extract
250g cream cheese, 125g butter, 1 cup icing sugar, 1tsp vanilla essence
--> Beat cream cheese n butter until smooth n creamy, add in icing sugar, lastly add vanilla essence.

Pemergian nenek
Nenekku meninggal. Pagi Ahad...sekitar jam 9am, 19 Februari 2012. Umi baru sahaja pulang ke kelantan pada minggu itu, dan ahad pagi tu Umi baru sahaja sampai di KL dari Kelantan. Sabtu petang, aku telefon umi dan kata Umi, nenek semakin sihat, makin ceria dan sudah lalu makan. Maka Umi decide utk pulang ke KL menaiki bas pada Sabtu mlm. Dan hari ahad keesokan hari, nenek sudah pergi menyambut Ilahi. Tanpa seorang di sisi. Makcik Yam yg selalu jaga nenek pun tiada waktu itu. Kata makcik Yam, pukul 8 lebih nenek masih ada...dia jenguk sebentar nenek sebelum keluar membeli sarapan dan ketika pulang ke rumah, dia tengok nenek sudah tiada. Urusan ajal dan maut, tidak cepat atau lewat barang sesaat.
Alhamdulillah, Umi pa dan adik dpt catch flight jam 1.30tgh hari. Hanya itu flight terawal yg sempat dikejar. Tatkala menerima perkhabaran dari kampung, umi sempat berpesan kpd tok imam, uruskan hal jenazah secepat mungkin tapi kalau boleh umi minta tunggu dia sampai sebelum jenazah dikebumikan. Syukur umi sempat melihat wajah arwah, memandikan arwah dan sebagainya. Kata umi, wajah arwah nenek tampak tenang, bersih dan cantik. Insya Allah, arwah pergi dengan senang. Jenazah selamat dikebumikan jam 5pm.
Family aku, abang dan sepupu kami sampai waktu Maghrib. Hb dah cuba drive selaju mungkin (tapi tetap cermat), tapi bukan rezeki kami utk menatap wajah arwah. Selepas Isyak, tahlil diadakan...juga buat 2 malam seterusnya. Kami anak beranak menguruskan hal tahlil, dgn bantuan jiran dan kawan arwah, syukur semua majlis selesai dan lancar. Insya allah, akhir bulan Mac kami akan pulang semula ke Kelantan utk kenduri tahlil hari ke 40. Kata imam, hari ke-40 roh akan datang ke rumah, dan pulang semula ke tempat asal buat selama-lamanya. Jadi seeloknya kita menghantar roh pulang dgn bacaan doa utk mendoakan kesejahteraannya di alam sana.
Kata Umi, dia bersyukur dan puas dapat menjaga nenek..walaupun di saat2 terakhir umi tiada di sisi. Kata Umi nenek pasti gembira kerana bukan setakat anak cucu tapi cicitnya turut mensedekahkan bacaan Yassin buat nenek. Pesanku kepada Idlan, jika mama dan abah tiada nanti jangan lupa sedekahkan bacaan Yassin dan doa kpd kami...kerana doa dari anak2 yg soleh sedikit sebyk dpt meringankan dosa dan azab yg ditanggung nanti, selain amalan si mati itu sendiri.

(12) Devil's Food Chocolate Cake
This was made for a neighbour, special for her hb's birthday. She initially wanted marble choc cheese brownie, but i suggested for this instead as the later one is rather too plain and simple. Alhamdulillah the comment was positive, glad she loves it! Tq my dear jiran!!!
DEVIL'S FOOD CHOCOLATE CAKE - source: Rima of bisousatoi.com
Ingredients
1 cup all purpose flour
1/4 cup cocoa powder
3/4 tsp bicarbonate soda
1/4 tsp salt
1/2 cup granulated sugar (i reduced to 1/4 cup)
1/2 cup brown sugar (i reduced to 1/4 cup)
65 gram butter
1 large egg - size A
1 tsp vanilla extract
1/4 cup buttermilk (i don't hv buttermilk in fridge, so i go for dutch lady full cream milk)
1/2 cup warm water
Methods
Preheat oven at 170C .. greased cake tin (i used 7", if u double the recipe, opt for 9" tin)
Sieve flour, cocoa powder, bicarbonate soda, salt, and set aside.
Beat butter with sugars until light and fluffy, add egg.
Add dry ingredients (flour, cocoa powder etc) alternately with liquid ingredients (buttermilk + warm water) in three portions
Add vanilla extract and continue to mix till well blended
Bake for about 30 minutes or until just cooked
Cream Cheese Frosting
250 g cream cheese (room temp)
125 g butter (room temp)
1 cup icing sugar - sifted
1 tsp vanilla extract
juice of a squeezed slice of lemon, to rid the cheese taste - i personally never add lemon juice to any of my cream cheese frosting
Beat cream cheese and butter, just until creamy, add the icing sugar, vanilla and lemon juice.
Chocolate Ganache
200 ml double cream with at least 30% fat content
250 g dark chocolate, chopped finely
a pinch of salt - i omit this, never add salt to my ganache all this while
In a double boiler, warm double cream until just at boiling point, add chopped chocolate and salt and stir, when all chocolate is melted, remove from the heat and continue stirring until all well mixed.
Cool cake completely, spread the cream cheese frosting and pour cool ganache on top.
Believe me, this cake definitely makes your day :)

It's Friday peeps! Tomorrow is Saturday, Saturday the weekend yeayyy!
I have few baking list (it got to ‘few’ after hours of scrutinizing n prioritizing hoho) to do over the weekend, all going to be new recipes taken from the net and friends. Can’t wait!!! Wanna have a look at my list?
- Carrot cake – thanx to my baker fren Farra for the recipe…tak sabar beb, I got fresh walnut in hands already!!! Alamak tapi carrot belum beli lagi iskkkk
- Victorian sandwich cakes – nyummy nyummy, belum buat dah terliur, bila dah buat apetah lagi!! Haha
- Oreos brownies – arghh this one also looks very tempting. Imagine a marriage between dark chocolate for the brownie layer and oreo biscuits with its vanilla cream crushed into the batter…adesss meleleh!
- Oreo truffles – damnn this one truly salivating it’s like love falls at first sight. Giler mengancam!
That’s it for this weekend. Surely I won’t have the time to try out all, but I vow to give them a try very soon :)

p/s: my lunch geng just now commented 'ari-ari makan nasi lemak eh'. So what's that supposed to mean? well let's put up this way... I will still be having my cakes as usual but promise NO nasi lemak at all for next week! janjiiii! If u can afford all the sweets, u sure can afford taking no extra cholesterol from the nasi lemak won't u :)

rotavirus
Ammar is staying at home today. Was having diarrhea since Tuesday and just now he vomited.
He was ok early this morning when we went to clinic, still active n cheerful as usual. Doc said it was virus, but we prayed it is not something as severe as rota.
As of now he refuses ORS and smecta, still. Will try to push at least a bit so that he keeps hydrated.
